The Sunsets of Mykonos

One thing I'll say about the Greeks: they love their sunsets! Seriously, everything is based around it, all restaurants face it, same goes for balconies, and nothing really starts until after everyone has enjoyed a good sunset. And with good reason - some of the best sunsets I've ever seen!

What can I say about the food of Mykonos? I couldn't get enough! All of it was so fresh, so yummy, simple and healthy. Most of it is so easy to replicate too - stay tuned for my attempts at recreating the taste of Mykonos in my kitchen :-)

The Dogs of Mykonos

Let's not forget the dogs of Mykonos, they were all just adorable. For every cat on the island, there must have been a dog - it's amazing how they all live so peacefully together.

The Cats Of Mykonos

As promised, here are the first pictures of our trip to Mykonos. The island is full of cats - they're absolutely everywhere and they all have such amazing character and are just seriously too cute! The one above we called Panos, probably the friendliest cat I've ever seen - you would have loved him! He was so loving and would follow us around for ages. Below is a small collection of the others we got to know over the rest of the week on the island:

Really Garlicky Chilli Prawn Tagliatelle in 3 easy steps

Prawn-Tagliatelle

If you're anything like me, which I know a lot of you are, you don't have a lot of time to spend cooking, as much as you'd love to. So here's another quick and easy recipe I made again last night and would love to share with all of you (any reason to use my new camera!). I'm proud to say I came up with it all by myself (one of the very few) on a day I was just craving something fresh, healthy, quick and easy. I promise it doesn't take longer than 15 minutes to make from start to finish and is just bursting with yummy, spicy and zesty flavours. Try it and let me know what you think!

Really Garlicky Chilli Prawn Tagliatelle

(Serves 2)

24 ripe small organic plum tomatoes, chopped into quarters
12 large cooked tiger prawns
6 cloves of garlic, chopped finely
1 large bunch of parsley, chopped roughly
1 mild red chilli, chopped finely
1/2 cup of organic extra virgin olive oil
Juice of 3 ripe lemons
Salt and black pepper to taste
400g good quality tagliatelle

1. Boil the pasta with a pinch of salt and start chopping all the ingredients.

2. Mix the lemon juice, oil, chilli, garlic, parsley, tomatoes, prawns, salt and pepper together in a bowl.

3. Drain the pasta, retaining some of the water it was boiled in, and add the mixture to the pasta, adding pasta water to dilute as necessary. Mix well, season accordingly and serve hot! De-lish.
