Catch Up Ketchup Recipe
(adapted from Jamie Oliver's Homemade Tomato Ketchup)
makes 1.5 litres
2 tbsp olive oil, for frying
2 medium onions, chopped
1.5kg fresh cherry tomatoes, halved
1 x 400g can of chopped tomatoes
400ml water
2 garlic cloves, chopped
1 tsp chilli flakes
1 tsp celery seeds
2 tsp ground coriander
1/4 tsp ground cloves
1 tsp fennel seeds
1 bunch fresh basil
1 tsp salt
1 tsp ground black pepper
200ml red wine vinegar
70g soft brown sugar
Pour the olive oil into a big non-stick pot over a medium heat. Add the onions and fry until softened.
Add the fresh tomatoes, canned tomatoes, water, garlic, chilli, celery seeds, coriander, cloves, fennel seeds, fresh basil, salt and black pepper.
Bring to the boil, stirring occasionally. Reduce the heat and simmer gently until the mixture reduces by half. Blend the sauce using a hand blender, then pour through a sieve into a big bowl.
Pour the sauce into a clean pot, add the vinegar and the brown sugar. Place over a medium to low heat and simmer until the sauce reduces to your desired consistency.
Pour the sauce into clean bottles or jars, and refrigerate. Serve with burgers and fries.
