1kg plums, halved, stones removed
500ml water
2 vanilla beans, cut length-ways, keeping seeds in pod
200g sugar
1 tablespoon orange blossom water
1. Place water in a large pan, add sugar, orange blossom water and vanilla pods, and bring to the boil on a high heat.
2. Reduce the heat to low, add the plums, and allow to simmer for about 10 minutes.
3. Serve hot or cold.
